Abstract/Description: | After deboning, leg muscles were minced and common salt was added at 1.5% (w/w). They were divided into 6 lots and mixed with 0, 0.02, 0.04, 0.06, 0.08 and 0.10% w/w of methyl gallate (MG) before making them into patties (100 g each) and analysed for physico-chemical qualities. Results showed that collagen solubility was significantly (p<0.01) increased due to MG inclusion. However, there was no significant change in perimysial content, shear force value and penetrometer readings. CIE L*, a* and b * values fluctuated between the treatments as also hue and chroma values. During storage, significant difference was observed in thiobarbituric acid reactive substance values (mg malonaldehyde/kg meat patty) between control (7.028) and MG incorporated patties (0.404). MG incorporated patties had lower microbial counts as compared to control. MG at 0.02% level could be used to extend shelf-life of chicken patties by reducing lipid oxidation and microbial growth. |
