Abstract/Description: | The paper was aimed to assess nutritional composition of Himalayan Mahseer (Tor putitora). Specimens were collected from the wild and production systems based on seasons, geographical locations and size groups. Samples were subjected to proximate, mineral (Fe, Mn, Zn, Se, Na, K and Ca) and amino acid analysis. Higher protein level (17.29 g/100 g) was observed during breeding season. Mahseer of Kosi river had high concentration of iron (1.28 mg/100 g) and moderate manganese and zinc contents (0.16 and 1.19 mg/100 g, respectively). Fish from Kameng river had high selenium content (1.56 mg/100 g). Major amino acids present were aspartic acid (7.61%), glutamic acid (9.63%), proline (6.68%), glycine (7.46%), leucine (7.59%) and lysine (9.41%). The study revealed that the size, season and geographical location are prominent factors in making a choice for consumption of Golden Mahseer for benefiting the human health. |
