Complete Details of Technology: :
Turmeric milk is a traditional health drink prepared by adding turmeric to milk. Due to its health benefits, it is often used as a homemade remedy to keep away from illness like common cold, fever etc. Traditionally it is prepared by adding turmeric powder and other spices to warm milk. This method of preparation has limitation of insoluble settlement of spices and low-bio-availability of its active ingredients. ICAR-Indian Institute of Spices Research, Kozhikode has developed a novel spice mix formulation as adjuvant in milk for turmeric milk preparation by overcoming the problem of insolubility and with enhanced bio-available active ingredients. The key ingredients of the spice mix are liquid extracts of turmeric, ginger and cinnamon. The lab scale technology developed at ICAR-IISR was further fine tuned by carrying out industrial trials at processing plant of Malabar Regional Co-operative Milk Producers' Union Ltd. (MRCMPU), Kozhikode, a Kerala Co-operative Milk Marketing Federation (KCMMF) undertaking. The optimum combination for production of turmeric enriched spice flavoured milk was standardised and commercialised to Malabar-MILMA during COVID-19 pandemic time and the MOU for technology transfer was signed on 21-8-2020.
Brief Description of Technology Including Salient Features:
Turmeric enriched spice flavoured (turmeric, ginger and cinnamon) dairy milk was prepared by mixing the liquid extracts ie. the oleoresins of above spices to the milk in a definite ratio. The milk was then homogenized and filled in bottles/ cans. The cans are then sterilized. The flavoured milk was initially tested for its overall acceptance and then for various physical and nutritional properties. Malabar MILMA, a Kerala Co-operative Milk Marketing Federation (KCMMF) undertaking at Kozhikode was then approached for product acceptance. After initial trails the product was readily accepted and a Memorandum of Understating was signed on 21-8-2020 for transfer of technology. Three products were transferred from ICAR-IISR to MILMA. The proposed product was released to the market by the Trade name of ‘MILMA Golden Milk’.
Benefits/Utility :
The technology for preparation of turmeric enriched spice flavoured dairy milk developed at ICAR-IISR, Kozhikode has the followings benefits: 1. Water insolubility of turmeric powder, the inherent problem associated with turmeric, is successfully overcome by using the liquid extract of turmeric, ginger and cinnamon. 2. The curcumin found in extract is largely bio-available. 3. The liquid spice blend of any spice flavour depending upon the choice of the consumer can be made available. 4. The spice blend, with its rich flavour and antioxidant properties, makes it nutritious, delicious and perfect health drink.
Precaution With The Technology : Turmeric enriched spice flavoured dairy milk commercialised by Malabar Milma in the trade name ‘Golden milk’ is a product prepared from dairy milk with the addition of optimised ratio of blended oleoresins of spices (turmeric, ginger and cinnamon). The blended product is filled in cans and sterilized. The shelf life of the product is 3 months. The ingredients used are dairy milk, sugar, natural extracts of turmeric and ginger & cinnamon. The active ingredient level is 15 mg curcuminoids / 100 ml.
Time Of Application Use : The product is available through out the year.
