Complete Details of Technology: :
Butter milk is a fermented dairy drink which is a wholesome rejuvenating drink that can bring down body heat, especially in the hovering sun. Buttermilk is a good source of calcium, phosphorus, vitamin B2, vitamin B12, pantothenic acid-vitamin B5, zinc, potassium, protein, iodine and molybdenum. Furthermore, addition of spices like ginger and pepper used to flavour the drink also help in improving digestion. The antioxidant and antimicrobial components present in spices enable them to enhance the therapeutic value and thus serve as a functional health drink. ICAR-Indian Institute of Spices Research, Kozhikode has developed a spice mix formulation which serves as adjuvant in butter milk. The key ingredients of the spice mix are turmeric, ginger, long pepper chilly and curry leaves which are used in the extract form to develop the turmeric enriched spice flavoured butter milk. The acceptable combination for production of turmeric enriched spice flavoured buttermilk was optimised and commercialised to Malabar - MILMA, a Kerala Co-operative Milk Marketing Federation (KCMMF), Kozhikode during COVID-19 pandemic time and the MOA for technology transfer was signed on 21-8-2020. The product was launched on 26 Nov 2020 during the Centenary celebration of Mr. Varghese Kurien, the Milk Man of the country at Kozhikode, Kerala.
Brief Description of Technology Including Salient Features:
Turmeric enriched spice flavoured butter milk was prepared by mixing the liquid extracts of spices like turmeric, ginger, long pepper chilly and curry leaves to the butter milk in a definite ratio and mixed uniformly. The flavoured butter milk prepared at the lab was initially tested for its taste and overall acceptability. The product was released in to the market with the Trade name ‘MILMA Ayur Butter Milk’.
Benefits/Utility :
Turmeric enriched spiced butter milk has the following benefits: 1. Water insolubility of turmeric powder, the inherent problem associated with turmeric, is successfully overcome by using the liquid extract of all spices. 2. The spice mix is amenable for fortification with any flavour of choice depending upon the consumer preference 3. The spice mix blend, with its rich flavour and antioxidant properties, makes it nutritious, delicious and perfect health drink.

Social Impact :
Turmeric enriched spiced butter milk is a value added product marketed by Malabar Regional Co-operative Milk Producers' Union. The dairy farmers are members of the cooperative and the additional profit obtained due to value addition of milk will go directly to the farmers.

Malabar Regional Co-operative Milk Producers' Union (MRCMPU) Limited is a union of more than 1000 village level dairy co-operative societies located in the six northern districts of Kerala and it is owned by the dairy farmers who are members of each affiliated society and who live in the area of operation of these societies. Further, the product is available in Amazon also and persons across the county can purchase it.
