Abstract/Description: All assumptions about the large food consignment always will be based on the sample lot which we take for sample analysis. So that, the condition and adequacy of the sample is very important. Any sample lot which is not the true representation of the large consignment will lead to misinterpretation. Sample should be collect aseptically and should handle carefully. Always use clean, dry, leak proof and suitably sized sterile containers for sample collection and storage. Special care has to be taken for frozen and chilled fish products to the required temperature. For fresh fish samples, bring the sample from the site of collection to the laboratory as early as possible in insulated containers. Always store dry fish sample in cool, dry place in air tight containers. Always open packed ready to eat (RTE) and ready to cook products (RTC) just prior to analysis.
