The plant-animal-man food chain, characteristics of the developed nations, is not easy to achieve in developing countries because of high cost per unit of protein or other nutrients vis-a-vis direct consumption of plant products. Indeed, as the human population increases, it may become all the more difficult to depend on animal foad, Therefore, attention needs to be paid to increase the production and upgrade the quality of plant products, We, in India, are perhaps fortunate that the cultivation and consumption of grain legumes has been a way of life with us, Increased production and consumption of grain legumes is the best way of overcoming the acute protein malnutrition among our people. Among grain legumes, soybean appears t o be the most potential crop for combating protein-calorie malnutrition.
