Tomato (Solarium lycopersicum) is the most widely grown solanaceous vegetable crop in the world and ranks second in importance after potato but top to the list of processed vegetables (Chaudhary, 1996). The acid sweet taste and unique flavour accounts for its popularity and diverse usage. It is consumed raw as salad or used in seasoning the vegetables. Apart from this, large quantities of tomatoes are also used in processing industry.
