Description |
The common cultivated pepper (Capsicum annuum L.) is a native of Mexico with secondary centres of origin in Guatemala (Bukasov, 1930 and Smith and Heiser, 1957). The genus Capsicum includes many cultivated forms such as pungent peppers used as condiment; mild as salad and pickles; bell-shaped (nonpungent) known as sweet pepper or 'Shimla march' for cooking and paprikas or Spanish pimiento for colouring and flavouring of culinary preparations. Nutritionally bell pepper is very rich in vitamin C ranging from 150 - 180 mg per 100 g and vitamin A constituting upto 12 per cent of total pigment content (Vyrodova et al., 1988).
