Description Colour affects every moment of our lives, strongly influencing the clothes we wear, the furnishing in our homes and gardens and the appeal of foods. The practice of colouring food dates back to ancient time and today colour has become a vital constituent of food. Colour aids the recognition of food and also has psychological appeal on the enjoyment of food (Sankaranarayan, 1981). Colour is one of the first characteristic perceived by senses and help in determining acceptability, judging the quality and basic aesthetic value of food. Addition of colour to food ensure the uniformity and intensify the naturally occurring pigments in food. Colour beside preserving the identity of food, also helps to protect flavour and light sensitive vitamins during storage by a sun screen effect.
