Description In developing countries agriculture is the mainstay of the economy. Hence, it is not a surprise that agricultural industries and related activities account for a considerable proportion of their output. Of the various types of activities that can be termed as agriculturally based, fruit and vegetable processing are among the most important. The North Eastern Region of our country in general and Manipur in particular is blessed with all kinds of pre-requisites for successful cultivation of many types of fruits and vegetables. The region is also considered as treasure trove for many underutilized and indigenous horticultural crops. Fruits and vegetables not only ensure higher productivity or profitability; but are also considered as important source of vitamins, minerals, and dietary fibres. The nutrient and mineral content in fruits and vegetables are much higher than the cereal crops. They are considered as protective foods for supplying adequate quantity of antioxidants and micro-nutrients. Some fruits and vegetables are rich in medicinal value. Fruits and vegetables also act as important source of energy to the human body. However, fruits and vegetables are cheap in the peak season and wasted due to spoilage at greater extent. Considerable losses also occur due to improper handling, transportation and lack of processing and preservation units. Due to absence of proper storage and marketing facilities, farmers are forced to sell their produces at throwaway prices. Sometimes farmers do not even get the two-way transportation cost, so they would rather dump their produce near the market area than bearing the transportation cost required for taking the produce back and often some of the produce has to be fed to animals or allowed to rot. By preserving the fruits and vegetables and their products we can enjoy them in off season. The main objective of fruit and vegetable processing is to supply wholesome, safe, nutritious and acceptable food to the consumers throughout the year. However, in India only 2.2% of the total production of fruits and vegetables are processed. The post harvest spoilage of the produce can be easily reduced by farm level post harvest management or setting up of small scale processing unit in rural and semi urban area. The community based value addition programme not only helps the farmers to fetch higher profit from their harvest, but also facilitates employment generation for the farm women. Processing and preservation of fruits and vegetables will also ensure their availability round-the-year. In this publication, the authors have nicely sketched the important aspects of processing and preservation of different fruits and vegetables of the region. Various concept of preservation and general method of value addition are explained with recipes and flow chart for easy understanding. The recipe for value added products of some indigenous fruits and vegetables have also been included. This book is a useful document for all the stakeholders working in the field of processing and preservation of fruits and vegetables.
