A hurdle technology-based approach for the reduction in immunogenicity of shrimp major allergen, tropomyosin was investigated by combining electron beam irradiation at 5 kGy and boiling, autoclaving, trypsin and chymotrypsin treatments along with peeled raw shrimp as control.
