Description Seed spices are annual herbs and their fruit or seed areused for flavorings, seasoning and making food tasty andtempting. Besides importance in food industry, the seedspices have been known for ages as effectivetherapeutic food. The power of spices to impart biologicalactivity is now slowly reemerging as an area of interestfor human health. The seed spices constitute animportant group of agricultural commodities and play asignificant role in our national economy. Historically,India has always been recognized as a land of spices.The states, Rajasthan and Gujarat have togethercontributed more than 80 per cent of the total seedspices produced in the country. About 20 seed spices aregrown in India, on the basis of area, production and utilityseed spices major seed spices are coriander, fenugreek,fennel, cumin, ajwain, dill, nigella, anise, celery andcaraway. Seed spicesseeds are used in small quantitiesfor flavorings numerous foods, as preservatives, inmedicine and for the manufacture of essential oil forultimate use in perfumery (Pruthi, 1992). India is leadingin production, consumption and export of seed spices inthe world.Center for Agri-Hort Development Institute in Manarvillage, district-Bhavnagar is located near the Gulf ofCambay (Gulf of Khambhat) in the Arabian Sea, a part ofSaurashtra peninsula, in central part of Gujarat, India
