Abstract/Description: | The study assessed the effect of incorporation of selected dehulled legumes (black gram, green gram, lentil and peas) on the pasting characteristics of rice and mice based extrudates made using low cost collect extruder as compared to raw composites. Extrudates were prepared keeping constant feed rate (25 kg/h) and moisture content (14%wb) at different legume incorporation levels (0,5,10 and 15%). Pasting characteristics of porridge made of extrudate flour as well as raw composites were evaluated using Rapid Vasico Analyser.
