Abstract | Andhra Pradesh ranks second in production of freshwater fishes in India. Earlier, much of the freshwater fish, mainly carps were transported in iced condition in traditional bamboo baskets to various places in India. Many developments took place in the transportation of these fishes. In export sector also, some processors started exporting frozen fish to middle-east countries. Recently, chilled freshwater fish export has started to Bangladesh and other countries. With the current developments and increase in demand for fish products, there is an immediate need for improved processing and value addition in freshwater fishes. Presence of small bones in the body meat is a major problem, as the consumer prefers boneless fillets and chunks. Devising proper methods for removal of these bones is an immediate necessity. Processing of frozen chunks and fiilets in retail packets. preparation of coated products, fish fingers and steaks boost value addition. Ready-to-eat fish curry in retortable pouches developed by CIFT is having much potential both for internal and export markets. The processing wastes such as intestines, airbladder, scales, main bone frames from filleting and other visceral wastes can be used to produce useful byproducts such as surgical sutures from fresh intestines, collagen and is in glass from air bladders, guanine based pearl-essence from the scales, ca1ciurn compounds from the bones, ensilage from visceral waste, using indigenous technologies. The need for efficient post-harvest handling, processing, value addition, quality control, packaging and marketing practices for freshwater fishes, and well-organized extension and training facilities in Andhra Pradesh, are discussed in this paper. |
