Bangalore cv. potatoes (11-13% starch) were pulped and acid hydrolysed to produce confectioners' syrup. Conditions of acid concn., acid type (HCl, H2SO4), autoclaving time and pressure were varied and hydrolysates produced were analysed for starch, glucose, degree Brix, pH, colour and filtration residue wt. Results are given in graphs. 4% HCl and 15 psi pressure for 5 min, or 1.5% H2SO4 under similar conditions, were selected as optimal treatments. If no sophisticated equipment was available and the hydrolysis had to be done at 1 atm, 6% HCl for 60 min or 4% H2SO4 for 45 min were optimal. Resultant hydrolysates were brown liquids with approx. 18 mg protein/ml. Further processing necessary to produce glucose syrup is discussed, i.e. 5% activated carbon at 80 degree C for 30 min for decolorization and partial deproteinization, adjustment to pH 4.8-5.5 using NaOH, ion exchange to remove ash, and vacuum concentration to 80 degree Brix. A 42 DE syrup which meets ISI standards was obtained.
