Description Corrosion behaviour of aluminium cans with model solutions (buffer solutions of pH 4.0 and 0.3% acidity incorporating accelerators or inhibitors), and vegetables in 2% brine was investigated. Galvanic current readings were noted during 100 h storage at ambient temp., using Al plates in a corrosion cell. Influence on corrosion of Al by organic acids and nitrite and nitrate was shown to be similar to tinplate. Of the polyphenols, pyrocatechol accelerated corrosion to a greater extent than gallic or tannic acid. Carboxymethyl cellulose and gelatin were shown to inhibit Al corrosion. Tests using potatoes, carrots and green beans in brine showed that lacquered, but not plain, Al may be suitable for canning these vegetables.
