Description It has been suggested that blue-green alga could provide a source of unconventional protein for use in foods and feeds. This study examined the structure and chemical nature of a glucan isolated from this alga. The alga was cultivated in fresh water (with bicarbonate as C source and NaNO3 as N source), harvested by filtration, washed, freeze-dried, defatted and sequentially extracted with 70% alcohol and cold and hot water. The insoluble residue was extracted with HCl at 70 degree C, the extracts being pooled, dialysed, concentrated, precipitated with alcohol and dried. The acid-soluble polysaccharide obtained was subjected to methylation analysis, periodate oxidation, CrO3 oxidation and enzymatic analysis. The results obtained indicated that the acid-soluble polysaccharide consists principally of glucose with small amounts of sulphate. It was found to have an alpha-1,4-linked glucan backbone with frequent side-chains through alpha-1,6-linked glucosyl residues.
