Description |
Attempts are being made to develop non-conventional beverages, by tea iDdastry as a diversification programme. The new product containing tea and malt extract, in four different proportions was prepared by vacuum shelf drying. Dese were stored in sealed cans at ambient temperature (17.28°C) and at 40°C for 40 days and subjected to sensory evaluation and chemical analysis. The stored samples did not show significant differences in moisture, protein and caffeine contents at both the temperarures. Total reducing sugars decreased during storage while creaming power was changed at both the temperatures. |
