Description The composition of pepper oil as reported in the literature is given in tabular form. The yield and properties of the pepper oils from 17 different varieties usually grown in Kerala, India, ranged as follows: yield of oil (% v/w) 2.00-3.80, refractive index (25 degree C) 1.4750-1.4810, sp. gr. (30 degree C) 0.8672-0.9246, optical rotation (25 degree )-3.0 to -27.6. Samples of the filtered oils were chromatographed with Brockman grade 1 alumina, eluted successively with (i) petroleum ether, (ii) benzene and (iii) ethyl ether, and the fractions examined by thin layer chromatography. Fraction (i) contained mono and sesquiterpenes, (ii) humulene and oxides, and (iii) alcohols (mono and sesquiterpene). The pepper oils were also examined by gas chromatography. Composition of pepper oils ranges as follows (%): alpha-pinene,4.5-19.4; camphene,trace; beta-pinene, 9.5-35.5; myrcene and sabinene, trace-42.2; limonene, 18.6-39.8; p-cymene, trace-4.3; bergamotene, trace-5.3; caryophyllene, 10.3-33.3; humulene, trace-4.9; selinene, trace-1.9. The wide variation in content of individual mono and sesquiterpenes in pepper oil reported by various workers is evidently due to the variation in the composition of commercial pepper with regard to the different varieties.
