Description In recent years, canning of dried peas, '
also known as processed peas, has developed
into a substantia..l industry in the U.K.,
France, the U.S.A.; and Australia. In the
U.K., the annual uutput of processed peas
is stated to be greater than that of any
other product canned in that country (1).
In the case of both green and dried peas,
the variety has been shown to effect the
quality of the canned product considerably
(2, 3, 4). Although in recent years dried
peas are being canned to some extent in
India, no information is available about
the suitablility for canning of different
varieties grown in the country. It was,
therefore, considered necessary to undertake
canning trials with some of these varieties.
The results of this study are briefly presented
in this paper.
