Description Beans are popular as vegetableg hoth in
the temperate and tropical regions of the
world. They are highly perishable and
greatly amenable to deterioration due to
desiccation.
According to Krause (1927), French,
Kidney or String beans (Phaseolus vulqaris)
remained in good condition for 3 weeks at
32-38°F and R.H. of 85%. Plantenius,
Jamison and Thompson (1934) have, however,
reported that French be'tns keep
longest at 40°F with a R.H. of about 85%
Lima beans (Phaseolus lunatus) in the pod
can be stored for 3·4 weeks at 32°F (Platenius,
Jamison and Thompson, 1934). Plank
and Schneider (1928) found that An average
temperature of 35.6°F and R.H. of 90%
were the conditions most favourable for the
storage of dwarf French beans and runner
be&ns (Pha-seolus multlilorus). Scott and
Mohoney (1946) reported that shelled lima
beans were held in acceptable condition for
11 days at 28-3:!°F. However, no work on
the cold storage of the field beans (Dolichos
la7lab) appears to have been reported.
