Description It has been well established that the deposition of fat in the liver is greatly
influenced by a number of dietary factors. Excessive amounts of fat (1) or carbohydrate
(2) or relative deficiency of lipotropic agents like choline (3)4), methionine
(5) or protein (6-rr) are the chief dietary factors which result in the production of
fatty livers. These studies on the fatty infiltration into the liver have been carried
out using synthetic diets. Similar work with reference to the rice diet, however,' is
scanty. Formation of fatty livers in rats maintained on a low-protein diet approximating
in composition to a poor rice diet supplemented with different fats (IS to 25%)
ha.s been reported by Damodaran and Sivaraman (12, 13). The influence of various
dietary fats at different levels of intake on the liver composition of rats with special
reference t6 lipids has been studied by Sahasrabudhe and Lakshminarayan Rao (14)
using the poor South Indian rice diet as well as the similar low protein synthetic diet.
No detailed study, however, has yet been carried out on the effect of dietary
fats on the fatty acids composition of liver-fat of rats. Channon et al (IS) determined
the aproximate composition of liver-fat of rats fed on synthetic diet containing
40% coconut oil. They, however, mentioned that owing to the very much
smaller amount of the liver fatty acids (28.96 g.) available for the analysis, it was
very difficult to deduce the exact composition of the liver-fat. In view of the above,
it was considered of great interest to study the effect of a high rice diet on the deposition
and the fatty acids composition of the liver-fat of rats.
