DUI'ing the course of our detailed studies (5, 7, 11) on the physico.chemicar composition of passion fruits (Passijl0ra edulis, Sims.), a survey of literature revealed little published information on the effect of fruit size on the recovery and quality of juice. However, some divergent reports (1,2,4,6, J3) are available on the subject pertaining to o¥ber fruits like oranges, (I. 2) pineapples, (4, 6) apples. (13) etc. In oranges, generally better quality is Ro;sociated with Emaller fruits (I) and smaller oranges yield slightly more juice than the bigger ones (2). In the case of apples, on the other hand, over.sized fruits do not keep as well as the normal sized fruits (13). In pineapples, (4, 6) the juice content is generally in proportion to their weight. No such information is available on paEsion fruit. The present report covers this aspect. |
