Candida rugosa lipase – pH, temperature, solvent, salt ,glycation effects-ultrasonic method

Summary, etc. The results obtained in the study of stability of a yeast enzyme, Candida rugosa lipase (CRL) and the factors that influence its stability have been presented in the present paper. The effect of pH on CRL stability was studied in the pH region 3-5, since the isoelctric point of candida rugoa lipase is within this range. The stability of CRL in aqueous solution has been investigated in the presence of added glycerol and acetone. Ultrasonic method has been used to determine the optimum temperature of CRL activity. The effect of addition of neutral salts such as NaCl and KCl on the stability of CRL has been investigated, by computing acoustical parameters. The effect of addition of sugars like glucose, fructose, sucrose, lactose and maltose on the binding ability of CRL with a typical drug, namely, Ambistyrin-S has been investigated by ultrasonic studies.
