Description Present investigation was conducted to study the effects of antioxidants on the oxidative
metabolim of guava during ripening and storage. During ripening the fruits of two varieties viz. Hisar
Safeda and Banarsi Surkha were harvested at three different stages of maturity i.e. mature green (MG),
Half ripe (HR) and Full ripe (FR). For storage studies the fruits of MG stage were dipped for 10min. in
SNP(0.25+0.5mM) and oxalic acid(2.5+5.0mM) and stored in corrugated fibre board boxes at room
(25+40C)and low temperature(10+20C). Fruits were analysed at each alternate day for 6 days (Banarsi
Surkha) and for 8 days (Hisar safeda). The lipoxygenase (LOX) activity, MDA value and H2O2 content
increased throughout ripening in both the varieties. Flesh firmness, TSS decreased.The ROS scavenging
enzymes like SOD, ASPX, CAT and GR exhibited decreased activity. The longer shelf life of Hisar
Safeda may be due to lesser decline in flesh firmness, lower levels of H2O2 and MDA content and
increased activities of antioxidant enzymes CAT, POX and APX. During storage, low storage had a
positive effect on MDA, LOX, flesh firmness, ascorbic acid content, antioxidant enzymes. SNP
treatments were effective in maintaining lipid peroxidation, LOX, H2O2 content, flesh
firmness.Oxalic acid treatment were effective in maintaining flesh firmness, ascorbic acid and
superoxide radical during storage and a positive effect on antioxidant enzymes (SOD and POX) was
observed.
