The purpose of present research was to develop a technology for the production of protein enriched probiotic yoghurt powder. Direct concentrated yoghurt was prepared with three different levels of TS viz., 20, 30 and 40% TS, these treatments corresponding fat and SNF were 4.3, 6.4 and 8.6% fat and 15.7, 19.6 and 31.4% SNF. The sensory scores of concentrated yoghurt up to 30% TS were very much comparable with control (3.0% fat and 14% TS). To enrich protein in concentrated yoghurt, additionally added SMP to increase SNF from 11 to 19.6% was replaced with WPC70 at three levels viz., 30, 40 and 50%. Replacement of 40% SMP with WPC70 produced a protein enriched concentrated yoghurt which was very much comparable with control. Among three different levels of probiotics tried; 1.5% of each of L. acidophilus and B. Bacterium secured higher scores than control. Thus produced yoghurt was spray dried using three different inlet/outlet temperatures and feed rates. The best quality protein enriched probiotic yoghurt powder was produced at 160/60 oC inlet/outlet temperatures, 25g/min feed rate. Thus produced powder was packed in PET/PE laminate and HDPE pouches and stored at 30±1oC. The product stored well up to 7 weeks in PET/PE laminate and 4.9 weeks in HDPE. Among different combinations of CO2:N2 as MAP gases; 100% N2 proved best and product stored well up to 90 days at 30±1oC and 180 days at 5±1oC. The cost of production of protein enriched probiotic yoghurt powder was Rs: 499.94 per kg.
