Description The present investigation e ntitled, ìDevelopment and evaluation of nectar and crus h f rom
bael-guava blendsî was carr ied out with the objectives to standardize preparatio n of nectar and crus h
f rom bael-guava blends, and to evaluate the storage quality of blended beverages. Nectar with 20 and
25 per cent pulp, 14 per cent TSS and 0.24 pe r cent acidity , and crus hes with 40 and 50 pe r cent pulp,
55 per cent TSS and 1.0 pe r cent acidity were prepared f rom bael-guava ble nds. Total soluble solids,
total and reducing sugars, acidity and browning inc reased, while ascorbic acid and total phe nols
decreased in nectar and crus h during three months storage . Overall acceptability of both the beverages
decreased dur ing storage pe r iod but all the beverages were found acceptable even af ter three mo nths
storage.
Among dif ferent blends, nectar prepared with 20 pe r cent pulp (40 bael : 60 guava), 14 pe r
cent TSS and 0.24 per cent acidity was found most acceptable (8.30) and crush prepared with 50 pe r
cent pulp (40 bael : 60 guava) , 55 pe r cent TSS and 1.0 per cent acidity was found most acceptable
(7.90) . Total plate count and mold count inc reased in nectar and decreased in crus h with the
advancement in s torage period. In nectar , cost of production was maximum (Rs. 13.40/L) in blend (0
bael : 100 guava) with 25 pe r cent pulp, 14 pe r cent TSS and 0.24 pe r cent acidity and minimum (Rs.
9.20/L) in blend (100 bael : 0 guava) with 20 pe r cent pulp, 14 per cent TSS and 0.24 pe r cent acidity .
In c rus h, cost of production was maximum (Rs. 41.50/L) in blend (0 bael : 100 guava) with 50 per cent
pulp, 55 per cent TSS and 1.0 pe r cent acidity and minimum (Rs. 32.50 /L) in blend (100 bael : 0
guava) with 40 per cent pulp, 55 pe r cent TSS and 1.0 per cent acidity .
