Description Ginger is an underground stem or rhizome of zingiberous, herbaceous plaul Zingiber officinale Rose, belonging to family Zingibcraceae and is one of the five most important major spices of India. Ginger is one of the first oriental spices known in Europe, having been obtained by the Greeks and Romans from Arab traders. The spices are known in Germany and France since the ninth century. During the fifth century A.D., ginger plants were grown in pots and carried on the long sea voyages between China and South-East Asia for fresh food that prevented scurvy (Rosengarten. 1969). In thirteenth and fourteenth centuries, ginger in England was nearly as common in trade as pepper when spices were expensive luxuries (Ridley, 1912). Ginger is thus believed to be a native of South-East Asia (Purscglove et al., 1981).
