In the history of the world the growth and survival of the various cultures is absolutely and directly related to the man's ability to feed himself. Tribes and nations developed only as they were able to feed themselves. Today food shortages and food surpluses play a major role in the national and international diplomacy. Therefore, it is not surprising that since antiquity human beings have sought ways to produce, preserve and store foods for lean periods. Today most food preservation involve the maintenance of the food product in a chemical and bacteriological inert stage until the food is consumed. The major emphasis has been to make the food more attractive, nutritious, convenient and palatable. However, most food products are perishable in nature and have limited shelf life. The spoilage starts and can cape many forms which can be measured in different ways. The bacteriological spoilage is usually the result of spoilage compounds being developed by microorganisms. The biochemical degradation of different constituents is another factor Nevertheless, spoilage makes the food unfit for human consumption because it is not palatable and/or safe. The issues related to spoilage have resulted in more controversies, dialogue and experimentation than any other parameter related with the post harvest management practices.
