Description |
Tomato (Lycopersicon esculentum Mill.) is one of the most important vegetable crop grown throughout the world. It has its origin in Peru, Equador and Bolivia (Andes Mountains of South America). In terms of value, it is next only to potato but as far as processing is concerned, it leads all the vegetables (Sandhu et al 1990). The fruits are eaten raw, cooked or processed as ketchup, puree, paste, powder, soup, juice, preserves and pickles. Tomato seed contains 24 percent oil, which is either used in the manufacture of margarine or used as salad oil when semi dried. Tomato is known for its outstanding nutritive value. Fruits contain 93.1 g moisture, 1.9g protein, O.lg fat, 0.6g minerals, 3.6g carbohydrates, vitamin-A (320 l.U.) and vitamin-C (31mg/l00g of edible portion) respectively(Aykroyd, 1963).
