Honey has been defined as the sweet, sugary substance produced by honeybees from the nectar of blossoms or from secretion of living plants which the bees collect, transform into honey and store in honey combs (Codex Alimentarius Commission, 1969). The current annual production of honey in the world is 1141352 metric tons (C.B.I., 1994) while the annual total honey production (including wild bees) of India is 18,000 tons (Dogra and Gupta, 1993). In Himachal Pradesh the total apiary honey production is about 150 - 200 tons honey annually (Goyal, 1993) . The agriculturally advanced state of Punjab has achieved annual production figure of about 1080 metric tons (Goyal, 1993).
