In different components of the balanced diet, vegetables occupy the prime place in a predominantly vegetarian country like India. India is the second largest producer of vegetables after China with 12 per cent share to total vegetable production in the world. However, per caput uptake of vegetables is estimated to be 135g/day against the requirement of 285 g per day for maintaining health.
