Vegetables constitute an essential component of a balanced diet and play a vital role in the maintenance of good human health. Moreover, the recent vegetarian movement has put the importance of vegetables at the apex in day to day life of the man. In several parts of Himachal Pradesh, the agro-climatic conditions are conducive for the production of vegetables like tomato, cucumber, beans, cauliflower, peas, capsicum and root crops when these are not available in the North Indian plains which not only meet the demand of the people in the plains but also improve the economy of the farmers of the state.
