Description Cauliflower (Brassica oleracea var. botrytis L.) a member of family Cruciferae, has been rightly described as aristocrat of cole crops (Bosewell, 1949). Judging by the area and production of cauliflower, India has alone 50 per cent of the total area and production in Asia (Chatterjee, 1986). It is grown throughout the country for its tender white curds which are used as vegetables, curies, soups and pickles. Cauliflower has high quality protein, and is peculiar in stability of vitamin C after cooking (Singh, 1987). It is rich in minerals such as potassium, sodium, iron, phosphorus, calcium, magnesium etc.
