Description |
Mushrooms have been served as delicacy of Royal kitchens since ages. But today due to their high nutritional value, palatability and commercial cultivation, these have become the food of common people. Out of 2000 species of mushrooms reported till date, 30 genera have been categorised as prime mushrooms. Of these, 80 are grown experimentally, 40 are cultivated economically, 20 are cultivated commercially and only six are produced on industrial scale (Chang, 1991). Although, cultivation of edible mushroom is about thousand years old, yet the number of species cultivated at industrial level are very few.
