Among the cereals, bread wheat (Triticum aestivum L.), a hexaploid (AABBDD) with 2n = 6x = 42, is the most important food grain crop in the world. In India, it is the second important food crop being next to rice. It is consumed mostly in the form of unleavened pan-baked bread, called chapatti in India. Its gluten content and associated bread making properties assure its role in society.
