Grain legumes contitute an important ingredient of the vegetarian diet and furnish much needed protein supplement to our food and balance the nutritive quality of the staple food grains like "heat and rice. Increaliing production and consumption of protein rich grain legumes is an imperative step to combat the protein malnutrition of the malises today. Pea is one of important grain legumes and offers a great potential ali an alternative to soybean regarding protein Superiority, as pea seeds contain a high protein content upto 40 per cent and on an average 23 per cent (Honti, 1933). Besides higher content of protein" pea is known to have appreciable amount of sugar, vitamins and minerals (Cherian et. al,1955).
