Potato, a native of.South America, occupies the largest area under any single vegetable in the World. It has a special value as food. As a food crop its importance was duly recognised soon after its introduction in Europe in 16th century. The consumption of potato per head is very low in India compared with that in the Western countries. In India its total production is 10695.8 thousand tonnes from an area of 848.2 thousand hectares with ah,average of 125.13 q/ha (Anonymous, 1986).
