Ginger. Zingiber officinale Rosc. is an important spice crop grown in different parts of the world. It is a perennial, herbaceous, monocotyledonous plant belonging to the family Zingiberaceae, which is commonly cultivated as an annual. Ginger is mainly confined to the old world tropics and the center of origin is South East Asia (Purseglove et al., 1981).
