Ginger (Zingiber officinale Rose.) is an important spice crop known for its medicinal properties. It is a herbaceous perennial, belonging to family zingiberaceae and is believed to be native of South East Asia (Purseglove et al., 1981). Ginger is used in culinary preparations, pickles, confectionery and for the manufacture of beverages. The major ginger growing countries in the world are India, China, Jamaica, Sierra Leone, Nigeria and Australia.
