Description |
Tomato (Lycopersicon esculentum Mill.) is one of the important annual vegetable crops of Solanaceae family grown all over the world and has its origin in Peru, Equador and Bolivia. It is being cultivated in an area of 4.55 million hectares, with the production of 125.02 million tonnes annually worldwide. In India, it is grown over an area of 0.54 million hectares with an annual production of 8.50 million tonnes (FAO, 2006). In terms of value, it ranks next to potato but as far as processing is concerned, it leads all the vegetables (Sandhu et ah, 1990). Tomato fruit contains 93.10 gimoisture, 1.90 g protein, 0.10 g fat, 0.60 g minerals, 3.60 g carbohydrates, vitamin A (320 I.U) and vitamin C (31 mg/lOOg of edible portion), respectively (Aykroyd, 1963).
