Description Cabbage (Brassica oleracea L. var. capitata), a member of family cruciferae is one of the important vegetable crops of the world. The word cabbage has been derived from the French Caboche meaning head. A terminal bud covered by several smooth and overlapping leaves forms the head. Due to its delicious taste, flavour and nutritive value, the vegetable occupies a prime place amongst the cole crops. Major part of the produce is consumed afresh in the form of vegetable, but it can also be used in pickle or sauerkraut. It is a rich source of vitamin C, minerals and proteins (Munger, 1988). Owing to its anticarcinogenic property, the vegetable has been reported to reduce the risk of certain types of cancers (Birt, 1988).
