Carrot (Dacus carota L.) of the family umbelliferae is one of the most popular root vegetables grown throughout the world. In India, it is grown in one or the other part throughout the year for its roots, which are consumed in various forms, as a cooked vegetable, salad and for making palatable pickles. Carrot roots are also used in preserves and sweets. The roots of deep purple or black types are used for preparing cold drink known as "kanji"
