Description Bell pepper (Capsicum annunm L.) commonly called, as "Shimla Mirch" is one of the most important commercial vegetable crops belonging to family solanaceae. It is believed to have been originated in Mexico with secondary centre of origin in Guatemala (Katyal, 1977). Besides, being a cash crop, bell pepper is an indispensable vegetarian food because of its high nutritional value being rich in vitamins A and C (Bose and Som, 1986). Fruits of bell pepper are mainly used for stuffing, preparation of sauces and pickles. It's food value per 100g edible portion has 29 Calories, 1.2 g protein, 11 mg calcium, 870 IU vitamin A, 175 mg ascorbic acid, 0.06 mg thiamin, 0.03 mg riboflavin and 0.55 mg niacin (Mac-Gillivrary, 1961).
