Description Thesis on “Studies on Heavy Metals Concentrations and Microbial Load in Selected Vegetables Irrigated With Untreated Waste Water on Allahabad” submitted in partial fulfillment of the requirements for the award of the degree of Doctor Of Philosophy in Food Science & Technology by Ghulam Rasoul Fazli.
The present study was conducted to assess the heavy metals (Cu, Cd, Pb, Ni) concentration and microbial load (Total Coliforms, Faecal coliforms, Staphylococcus aureus, Listeria spp., Pseudomonasspp, Salmonellaspp) of vegetables (Spinach, Cucumber, Ladyfinger, Ridge guard) irrigated with untreated waste water in around Yamuna river of Allahabad district. Lead was several fold higher in all vegetables irrigated with untreated waste water in both sites (Mahewa Path and ArailGhat), the study showed that the concentration of lead varied greatly in all vegetables. Spinach was having the higher average mean concentration of lead (18.764 mg/L), followed by Ladyfinger (15.227mg/L), Ridge gourd (5.117mg/L) and Cucumber (2.602mg/L) and Cu (1.372mg/L) was higher in spinach followed by cucumber (0.369mg/L), Ladyfinger (0.182mg/L) and Ridge gourd (0.170mg/L), in site one (Mahewa path). The average mean concentration of Pb in Spinach, Cucumber, Ladyfinger and Ridge gourd were (4.333mg/L), (5.079mg/L), (10.407mg/L) and (10.779mg/L) respectively, in case of Cu Ridge gourd (0.269mg/L) got the highest amount followed by Spinach (0.237mg/L), Cucumber (0.227mg/L) and Ladyfinger (0.218mg/L) in site twoArailGhat. In case of microbial load,total coliform and faecal coliform were observed positive in all vegetables, the ANOVA tables appended with appendix showed Non-significant result of Staphylococcus aureusfor site one (Mahewa Path) but in site two(ArailGhat), significant result was obtained for Staphylococcusaureus. Listeria spp showed a Non-significant result for site one but in site two there was significantresults. There was significant result of salmonella sppin site one similarly in site two. The study suggests that wastewater irrigation led to accumulation of heavy metals in food stuff causing potential health risk to consumers.
