Description |
Present investigation was carried out to isolate the fungi and bacteria associated uith different raisin samples collected from markets of different places. The ability of fungi to produce toxins and their relationship uith chemical analysis of sampl'es was also studied. In all, thirty-two samples of raisins were collected from different places. Isolation of fungi from these samples yielded seven cultures of different fungi, out of which four belonging to genus Aspergillus one each of Penicjllium, Fusarjum and Rhizopus. In isolation of bacteria in all four cultures of different bacteria as follows ' Pseudomonas sp., Micrococcus sp., Xanthompnas, sp. and Bacillus sp. uere obtained. Results indicated that raisins uere heavily infected uith £• flav.u3» fL» niqer and Pseudomonas sp. The test to detect contamination with toxigenic fungi indicated that 13 samples of raisins uere contaminated uith toxigenic fungi.The relation of moisture content to microbial count and toxin contamination indicated that with increase in moisture content,; the total microbial count of fungi and bacteria also increases. As microbial count increases, the total sugars and reducing sugars decreases. However, nitrogen, acidity and ash increases. |
