Abstract Techniques are described for the preparation of instant soup mixes
from two common Indian fishes, seer (Scomberomorus spp.) and
Cullawah (Epinepherlus spp.) and a fish cake from canned prawns.
The preparations show good keeping behaviour after being subjected
to freeze drying. Various types of edible preparations prepared
from the preserved mixes and the cake have excellent consumer
acceptability, They are particularly suitable for meeting the defence
requirements.
