Abstract Fresh kati (a type of Indian oil sardine) of uniform size (2-4/kg) from local landings at Bombay were washed and stored for 13 days in insulated boxes (provided with a raised perforated platform) in ice (1:1 ratio). Periodically, the ice lost was replenished. Data on biochemical moisture, total N, alpha amino N, free fatty acid content, thiobarbituric acid, bacteriological and organoleptic studies of stored fish indicated that kati stored well in ice for 9 days without appreciable loss in overall quality.
