Abstract Sensory evaluation of aquatic products is very important in marketing research, product
development, quality assurance and research and development. The ultimate aim of sensory evaluation is to predict its acceptance. In product testing pertained to marketing management, a number of simple appraisal techniques are conducted to answer questions dealing with products of competition or to forecast the success of a new item, as compared with traditional one. An expert taste panel is necessary for evaluation of food products. Definite criteria should be followed in selection of panelists and attributes to be studied.
