Abstract An electronic instrument was developed in Central Institute of Fisheries
Technology using indigenous technology for measuring water activity (a w.) in
dry fish samples . The measurement of a,, is important in many phases of
food processing . It influences flavour, microbial activity, moisture level .
hydration, texture and nutritive value of foods . The salient features of the
instrument are quick and accurate measurement, easy operation, digital display
of data . low power requirement and portability. Hygroscopic materials for
measurement of Equilibrium Relative Humidity (ERH) and semiconductor
diode for measurement of temperature of the atmosphere above the food sample were incorporated in the sensor part .
